This is a limited-edition Junmai Ginjo sake brewed with Yamagata-grown "Dewanosato" rice polished down to 55%.
It was pressed in spring, pasteurized, and then stored at a low temperature, with its fresh flavor bottled as is.
This Nama-zume (unpasteurized before bottling) sake offers a refreshing aroma reminiscent of white grapes. Its rich acidity and umami harmonize to create a flavor that further enhances the deliciousness of seasonal dishes.
Furthermore, Kimoto-method brewing produces sake that gains depth of flavor with aging, so we also recommend enjoying it after slow aging at home.
