A limited edition Junmai Ginjo sake made from Yamagata Prefecture's "Dewa no Sato" rice, polished to 55%.
It is pressed in the spring, pasteurized, stored at low temperatures, and then bottled to preserve the fresh flavor.
This unpasteurized wine has a refreshing white grape-like aroma. Its harmonious taste of full-bodied acidity and umami enhances the flavor of seasonal dishes.
In addition, kimoto brewing produces sake whose flavor deepens with age, so we recommend letting it sit for a while at home before enjoying it.
