Pesora pickles are spicy and sour pickles that originate in the Kitamurayama region of Yamagata Prefecture.
Although the name doesn't suggest it, pesora pickles are spicy and sour eggplant pickles. They have been eaten in the Kitamurayama region of northern Yamagata Prefecture for a long time, and are popular not only as a side dish with rice but also as a snack with alcohol.
Igetaya Shoji Brewery's Pesora Pickles are made using traditional methods, and the only ingredients used are eggplants picked that morning by contracted farmers, salt, and chili peppers. They are fermented and pickled with the help of lactic acid bacteria, with no time or effort spared.
We also do not use any preservatives or coloring agents, and value the natural color and deliciousness of our products.

Igetaya Shoji Brewery is a long-established pickle shop founded in 1873. The current representative, Mr. Shoji, is the sixth generation owner.
Located in Oishida Town in northern Yamagata Prefecture, a town known for its heavy snowfall, the shop uses as many local ingredients as possible and painstakingly handcrafts its products to ensure food safety and the flavor of a long-established establishment. Their dedication to crafting and delicious taste has earned them fans across the country, and they are frequently featured in various media outlets.
