Pesora-zuke, a spicy and sour pickled eggplant originating from the Kitamurayama region of Yamagata Prefecture. Despite its name, Pesora-zuke is a spicy and sour pickled eggplant. It has long been a staple in the Kitamurayama region of northern Yamagata Prefecture and is popular as a side dish for rice and as a snack with alcoholic beverages. The Pesora-zuke made by Igetaya Shoji Jozo carefully preserves traditional manufacturing methods, using only eggplants harvested fresh in the morning by contract farmers, salt, and chili peppers as ingredients. They spare no effort, fermenting and pickling the eggplants with the help of lactic acid bacteria. Furthermore, no preservatives or artificial colors are used, valuing the natural color and deliciousness. ❖Established in 1873. Oishida's long-established "Igetaya Shoji Jozo"❖ Igetaya Shoji Jozo is a long-established pickle shop founded in 1873. The current representative, Mr. Shoji, is the sixth generation. In Oishida Town, northern Yamagata Prefecture, also known for its heavy snowfall, they continue to uphold food safety and the taste of a long-established brand by using local ingredients as much as possible and employing time-consuming handmade methods.
