“Mitsuo Yamakawa 2023 Fuyu” is about pairing with fermented foods.
This time's dish is ``Pesorazuke'', a spicy and sour dish that originated in the Kitamurayama region of Yamagata Prefecture.
Pesora-zuke is a spicy and sour eggplant pickle, although you might not guess it from the name. It has been eaten for a long time in the Kitamurayama region of northern Yamagata Prefecture, and is popular not only as an accompaniment to rice but also as a snack with alcohol.
The Pesora pickles made by Igeta Shoji Jozo carefully preserve the traditional manufacturing method and use only eggplants harvested in the morning grown by contracted farmers, salt, and chili peppers. We spare no time and effort in fermenting and pickling with the help of lactic acid bacteria.
In addition, we do not use preservatives or coloring agents, and value the natural color and taste of our products.

Igetaya Shoji Jozo is a long-established pickle shop founded in 1873. The current representative, Mr. Shoji, is the 6th generation.
In Oishida Town, located in northern Yamagata Prefecture, which is also known for its heavy snowfall area, we use local ingredients as much as possible and take the time to make our products by hand, preserving the food safety and taste of our long-established restaurant.
