The snack this time is "pesora pickles," a spicy and sour dish that originated in the Kitamurayama region of Yamagata Prefecture.
Although you wouldn't guess from the name, pesora pickles are spicy and sour eggplant pickles. They have been eaten since ancient times in the Kitamurayama region in northern Yamagata Prefecture, and are popular not only as a side dish for rice but also as a snack to go with alcohol.
Igetaya Shoji Brewery's Pesora Pickles are made using traditional methods, and the only ingredients used are eggplants picked that morning by contracted farmers, salt, and chili peppers. They are fermented and pickled with the help of lactic acid bacteria, with great care and effort.
In addition, we do not use any preservatives or colorings, and value the natural color and flavor of our products.

Igetaya Shoji Brewery is a long-established pickle shop founded in 1873. The current representative, Mr. Shoji, is the sixth generation owner.
Located in Oishida Town, a town in northern Yamagata Prefecture known for its heavy snowfall, the shop continues to protect food safety and the flavor of its long-established traditions by painstakingly handcrafting its products using as many local ingredients as possible. Their approach to manufacturing and deliciousness has earned them fans all over the country, and they are frequently featured in various media outlets.
With the motto of "making honest, clean and proper food," we continue to make authentic pickles that have been passed down through the generations.
