2025 Vintage

We have recreated the winemaking methods from 30 years ago, referencing the winemaking notes used by the grandfather of our current production manager, Kazuhiro Sato. We used 100% Yamagata Prefecture grapes (Delaware and Niagara varieties) and prepared the wine without adding any antioxidants. This is a white wine with a honey-like aroma, a gentle sweetness, and a harmonious, lingering acidity.
Although sweet, the firm acidity gives this sweet wine a dignified structure. It is recommended as an aperitif or digestif rather than a wine to be enjoyed with a meal.
