Autumn sake made with rice from Yamagata Prefecture, "Dewa no Sato."
We are trying to brew rice with a polishing ratio of 50% for koji rice and 70% for kakemai. Approximately 20% of the brewing mixture is koji rice, and it is no exaggeration to say that 20% of the koji determines the flavor of the sake. The gentle aroma, soft, clean, and sharp taste is the result of the 50% polishing ratio of koji rice. Enjoy it as an accompaniment to your meal with seasonal ingredients.
