Daiginjo sake made entirely by hand using 35% polished Yamada Nishiki rice grown in Hyogo Prefecture. This year's Yamada Nishiki was a little hard, so I paid more attention to the "dissolution balance" by absorbing more water than usual. Thanks to that, I was able to win the gold prize at the National New Sake Appraisal. Please enjoy the smooth taste with the harmony of flavors.
