This Junmai Ginjo sake is made from Kita Shizuku, a new variety of rice developed in Hokkaido that is suitable for sake brewing.
This prototype is made from undiluted sake with an alcohol content of 13%. It has a smooth mouthfeel, a good balance of umami and acidity, and a clean finish, making it a recommended drink to have with meals.
