This is a new brand based on the theme of "aging" proposed by Tatenokawa Sake Brewery.
This is a sake that pursues the value of a beautifully matured "vintage" that does not have any unpleasant taste, such as the scenery that can be seen beyond the polished rice, the deep flavor that highlights the individuality of the sake rice, and the taste.
``Sobei Wase,'' the rare brewer's rice of the Shonai region. Brewed with sake rice harvested in 2020, and undergoing proper temperature control and aging in the bottle, this sake has a subdued aroma and taste that is different from the youthful impression of fresh and unpasteurized sake. Finished.
