This flagship Omachi sake brewed by Yamagata Masamune, which was brewed until the 2017 harvest, is now back for the first time in six years!
Of course it can be drunk immediately, but we also recommend aging it for a long time in the refrigerator.

I had a chance to drink this old sake for the first time in several years, and was so impressed by how beautifully it had aged that I decided to revive it.
2023 was a difficult year with abnormally high temperatures and hard rice, but in a good way, the Omachi rice from Akaiwa was quite close to the average. However, for some reason, the acidity tended to be much higher than usual (usually 1.60, 2.00 this year), so we left a little sweetness to balance the taste. As a result, the balance of the taste is not much different from before, but it has a bigger flavor, and is centered around an isoamyl-based aroma (sweetness like white peach or honey) and a faint bitterness, as is typical of Yamagata Masamune. It is also ideal for long-term aging, so even though low alcohol is in vogue, we made the alcohol content close to 16 degrees. We hope you can feel the richness and transparency that only a higher alcohol content can provide.
