Mitsuo Yamakawa 2024 Winter
Mitsuo Yamakawa 2024 Winter
Yamakawa Mitsuo is an ambitious unit formed by four brewers in Yamagata Prefecture.
It was named after each letter of the brand name and breathed life into it.
(Yamagata Masamune, Tatenogawa, Toko, Otokoyama)
In keeping with the theme of "the times," this time we looked at 1998, the last year of Sasaki Shiro, the Nanbu master brewer who decided the direction of Uyo Otokoyama's sake.
Although sake brewing methods change with the times, we brewed the sake as faithfully as possible using the methods of Toji Sasaki. The label depicts Mitsuo working hard despite being confused by a method that is different from his own.
100% of the rice used is contract-grown in the Kashiwakura Monden area of Yamagata City.
The result is a dry, simple sake with subdued aroma, in keeping with the tastes of Nanbu toji Sasaki Shiro.
