The sake that is made in the winter and left to rest (matured) in the brewery for several months is commonly called "Natsuo." It has a subtle ginjo aroma, and when you put it in your mouth, the gentle sweetness and umami of the rice spreads, and the aftertaste is crisp and firm. It has a solid body and good flavor, so it goes great with a rich sauce made by mixing mayonnaise with a little miso! On a hot and humid summer night, try it with chilled tomato, cucumber, and carrot vegetable sticks.
