This is for those who don't like autumn's mature sake, which tends to be a bit heavy. By using white koji in part of the brewing process, a refreshing acidity is added. It will be interesting to see how the rich fruit flavor changes when heated. This is a sake that fully brings out the characteristics of the sake rice "Miyama Nishiki".
