``Aizan'', which inherits the lineage of ``Yamada Nishiki'' and ``Omachi'', is said to be a phantom sake rice because it is very difficult to cultivate, although it has large grains and a large shinpaku (starch in the center of the rice). Even at Dewazakura, the production volume is limited to one tank per year, but the carefully brewed sake is full of the sweetness and umami of the rice, and the rich aftertaste continues long after you drink it.
