Apart from the usual Kame no O, this sake is freshly pressed in the winter and slowly aged at a temperature of 5 degrees Celsius. Once the flavor has mellowed, it is bottle pasteurized, making it a limited edition product that is only available at this time of year.
Kame no O's deep, rich flavor, achieved through moderate aging, demonstrates its presence over a wide range of temperatures, from cold to warm.
The legendary rice, "Kame no O," was discovered in Yamagata in 1893, the year after Dewazakura was founded. Three miraculous ears of rice ripened in the midst of severe cold damage.
The brewery's only Junmai Daiginjo sake made with Kame no Oo brewing was completed in cooperation with 10 liquor stores in Yamagata Prefecture, from sake quality design to brewing design and sales. Dewazakura's only Junmai Daiginjo sake brewed with Kame no Oo brewing is one that exudes the essence of Yamagata.
