【Dewazakura's New Initiative! Circulation and Terroir】Zero-waste rice farming
Made with 100% "Tsuyahime" rice from Tendo City. No pesticides or chemical fertilizers are used during cultivation. The fertilizer used for rice cultivation is fermented sake lees and rice bran, byproducts of sake brewing. What originated from sake returns to the earth, nourishing the next rice crop. This "circular agriculture" is the future Dewazakura envisions.

The power of the moon within you. Expressing ancient Japanese "prayer." The label depicts a "full moon" shimmering in a sake cup. Since ancient times, the Japanese have farmed in rhythm with the moon's phases, praying for abundant harvests. This mystical custom of capturing the moon's power in sake and imbibing it is expressed through modern art.

~A Brewery's Story, Connected to Nature~

1. "Agricultural" Memory Connecting the Moon and Earth
Since ancient times, agriculture and the moon have been connected by a single rhythm. Our ancestors used the moon's phases as a "calendar," sowing seeds and celebrating harvests... There is a history of living in harmony with the moon. The name "Opening the Moon's Door" expresses our wish to return to "sustainable agriculture," aligning with nature's rhythm and reconnecting with the earth once again.

2. Dewazakura's Step Towards "Coexistence"
The unique fertilizer that breathes life into the rice fields is made from fermented sake lees and rice bran from our brewery. In spring and autumn, our brewers personally transport it to the fields, carefully nurturing the soil. Grown without any pesticides or chemical fertilizers, with the goal of "making the most delicious rice!", the "Tsuyahime" rice developed a powerful inherent strength and a plump, rich, gentle aroma. We wanted to transform this vibrant flavor directly into sake.

3. The Power of Rice, Unadorned
Because this delicious rice was cultivated with such care, we avoided excessive milling. We employed our proprietary "80% flat milling" (a technique that grinds the rice vertically, like a rugby ball) to maximize the umami of the rice. Please enjoy the rich and profound flavor that can only be found when the rice is not overly polished.

4. A Small Universe Floating in Your Sake Cup
The label depicts a photograph of a "full moon" gently reflected in the sake filling a cup. In ancient times, moon viewing was a beautiful custom to celebrate bountiful harvests and offer prayers to the moon's power. By gently gazing into the cup in your hand and drinking the reflected moon, you absorb its power into your body. This design conveys a message of gratitude to nature, the cradle of life, and connection through the heart.

Beyond that gently opened door awaits not just "deliciousness," but a calm and rich experience that satisfies the soul. This sake is a brewery's story, filled with the lives of brewers driven by such aspirations.
