This is the "seme" (pressing portion) of a limited-production Junmai Daiginjo, brewed using the same methods as competition sake, from "Dewasansan" rice grown in our own fields.
This high-quality sake was brewed to achieve the high-dimensional, luxurious aroma and flavor required for competition sake, resulting in a fragrant and full-bodied taste. It is a limited-edition sake that utilizes a process to prevent oxidation by minimizing the time from pressing to bottling.
