"Breaking the Three Hundred Years of Rules" is a rule that has been followed for 300 years since the brewery was founded: pasteurize and sterilize sake before shipping. This limited series was born from the brewery's desire to "allow people to drink sake as it is," even if it meant breaking that rule. The brewery uses soft water from the Takase River underground of the Zao Mountains for brewing, and ginjo sake and above are brewed using a special method called all-koji brewing.
