It is a raw sake brewed using 100% Yamada Nishiki, the king of sake rice, which is said to be difficult to grow in areas with heavy snowfall. We use 100% Yamada Nishiki from Obanazawa, which has been fruited over many years by members of the agricultural association Domaine Rakushu Rakusui.
It is characterized by its rich umami that has been aged for about two years, and the rich flavor of ripe tropical fruits matches well with the depth of the Yamada Nishiki sake rice. Ginjo-brew + 14% alcohol + maturity is a trinity of perfect season sake.
