This limited edition sake is made from sake rice "Hattan 35" and brewed with Association yeast No. 77, which Toji Toda specializes in. The sake has a sake meter value of -22, but the acidity is quite high at 3.1, so it has a more sour taste than a sweet one, and we recommend enjoying it in a wine glass. Please enjoy this carefully crafted bottle by Toji Toda, who is a master of "acidity."
