"Delaware" from Yamagata Prefecture was fermented at low temperatures for 2 months (60 days) to make an orange-fermented wine, and "Muscat Bailey A" was fermented at low temperatures for 3 months (90 days).The paddle was only added 2 or 3 times during this period, so the wine was left almost alone.However, by not encouraging rapid sugar fermentation through paddle addition, cold maceration was achieved, and the aromas of the skins were encouraged to be transferred to the liquid.
This time, we also carried out lactic acid fermentation in tanks before secondary fermentation in the bottle. This resulted in a wine with a fun development of flavor. Upon opening, you can also feel the fruity aroma and toasty flavor.
