Last year, we tried malolactic fermentation, a fermentation technique used for wine, for the first time. It was very well received, with the strange taste reminiscent of white wine, despite being a Japanese sake, and this year, young female brewers took on the challenge of incorporating this fermentation technique to create a slightly different sake. This year's challenge is to create a "sake that everyone can drink, including women." It fuses a sweet and sour taste with a "yogurt-like aroma and flavor" achieved through malolactic fermentation.
