This wine is made from Berry A from Yamagata Prefecture and Campbell from our own farm. The destemmed and crushed grapes are left to soak in the skins for 80 days.
Considering the wide range of food compatibility, the flavor base is Berry A, ripe berry, roasted coffee, and the strong umami and acidity of juicy Campbell grapes that spreads in the mouth. Campbell's fragrant sparkling wine goes well with ethnic and Chinese cuisines and other dishes with various aromas. Of course, it will also be a great companion to other dishes.
This time, we reduced the amount of stirring and left the wine to extract the rich fruitiness that is unique to cold maceration, so you can enjoy the deep flavor of the wine itself even after the gas in the bottle has decreased after opening. This is a two-stage delicious wine that you can enjoy the lively taste when you open it and the delicious taste of the wine itself after opening it.
The name "Pump up" comes from the idea of bursting with energy, enthusiasm, and excitement. I named it this wine because I wanted people to have fun and move forward with it. Emi also drew the cats in my home.
This wine has undergone some MLF in the bottle, so please enjoy its unique flavor. It may produce a lot of gas, so please chill it well and open it slowly before enjoying it.
