This wine is made from Berry A grown in Yamagata Prefecture and Campbell's grapes grown on our own farm. The destemmed and crushed grapes are macerated on the skins for 80 days.
Considering the wide range of food pairings, the base flavor is Berry A, followed by ripe berry and roasted coffee, and the strong umami and acidity of juicy Campbell's grapes that spreads in the mouth. Campbell's fragrant sparkling wine pairs well with a variety of aromatic dishes, including ethnic and Chinese cuisine. Of course, it will also complement other dishes perfectly.
This time, we reduced the amount of stirring and left the wine to extract the rich fruitiness that is characteristic of cold maceration. This allows you to enjoy the deep flavor of the wine itself even after the gas in the bottle has decreased. This is a wine that can be enjoyed in two stages: lively when opened and the umami of the wine itself after opening.
The name "Pump up" comes from the idea of bursting with energy, enthusiasm, and excitement. We chose this name because we wanted this wine to help people have fun and move forward. Emi also drew the "cats" in the illustrations, representing our cats.
This wine has undergone some MLF in the bottle, so please enjoy its unique flavor. It may produce a lot of gas, so please chill it thoroughly and open it slowly before enjoying.
