White wine (blanc) that brings out the umami and aroma through short-term skin contact and low-temperature fermentation, using nucleated Delaware from Yamagata Prefecture (near the Kubote district of Kaminoyama City), and umami from the skin and seeds through fermentation. We separately made two lots of orange wine (orange) that extracted the bitterness and astringency, and after fermentation was completed, we combined it (73% orange and 27% blanc for 2022).
A light dry orange wine with a gorgeous aroma of cotton candy and apples, and a pleasant sourness and faint astringency.
