2020 Delaware Blanc (Collection Classic)
2020 Delaware Blanc (Collection Classic)
Collection Classique is a series of still wines where you can honestly feel the taste of grapes.
After brewing to bring out the characteristics of the variety, we wait for the sediment to fall naturally and bottle the supernatant unfiltered to create a dry wine.
Because it is unfiltered, there may be turbidity and sediment (floating matter, etc.), but it is an ingredient derived from grapes, so you can enjoy it with confidence.
We use cored Delaware from the Kubote area of Kaminoyama City and the Motozawa area of Yamagata City (next to Kubote) in Yamagata Prefecture, and bring out the flavor and aroma through short-term skin contact and low-temperature fermentation. After the fermentation is finished, the malolactic fermentation and surrie (contact with the lees) add mellowness and complexity. A dry white wine with a fruity, fruity aroma and smooth acidity.
(No sugar, no acid, with antioxidants, short skin contact, malolactic fermentation, 4 months of surrie period (3 battonages), no filtration, no fining agents, raw stuffing)
