Daiyamazakura is a deep pale pink mountain cherry tree that grows wild in northern Japan. At Nishizao Highlands, which overlooks the Yamagata Basin, a famous spot for cherry blossoms, you can enjoy the second cherry blossom viewing after the Yoshino cherry blossoms are over.
This sake is a junmai daiginjo sake that fully brings out the characteristics of each rice, made from Yamagata Prefecture's suitable rice for sake brewing, "Dewa Sansan" and "Miyama Nishiki". Unlike ginjo sake, which has a flashy aroma, it has a warm and nutritious flavor that stands out cold (at room temperature) and has an elegant, deep aroma. The compatibility with early spring mountain vegetable dishes is outstanding.
