This new Junmai sake from Yonezuru is made from Yonezuru's original sake rice "Kisui" that has been flat-polished to produce a taste that exceeds the quality of conventional Junmai sake, even with a light polishing.
It features a slightly oily, complex flavor and a strong acidity. The flavor changes after 2-3 days of opening, which is a curious development.

* A method of polishing rice by shaving it flat. Normally, rice is shaved into a spherical shape, but in flat polishing, the rice is shaved to an equal thickness from the surface of the rice to create a flat shape. This polishing method is said to efficiently remove unnecessary components such as protein.
