Kojima Sohonten is the 13th oldest sake brewery in Japan.
Founded (1597) in the Azuchi-Momoyama period, before the Edo period. Today, stainless steel tanks are the mainstream for brewing sake, but earthenware was used before wooden barrels became popular in the Edo period. Much smaller and more delicate to handle than current tanks. Unglazed earthen pot preparation brings out the minerals derived from the raw materials stones and soil, and the complex taste of microorganisms. Based on Yamagata Prefecture's "Kame-no-o" rice, which is the root of many rice varieties, a small amount of "Tsuyahime" is blended with 90% rice polishing, following the times when there were no rice polishing machines for brewing. By using kimoto-zukuri method, we challenged to rediscover the uniqueness of ancient times that has disappeared with the passage of 400 years.
