This Junmai Ginjo sake is made using 100% Yamazake No. 4 (Tamanae) rice grown by students in the agriculture department of the local high school (Murayama Industrial High School) where the brewery is located, and has a story that goes all the way through the sake-brewing experience.
This rice variety brings out the best in Yamazake No. 4, a cross between Yamadanishiki and Kinmonnishiki, and has a crisp, pleasant taste with a good balance of richness and umami.
