Kijoshu is sake brewed by substituting a portion of the water used for brewing with sake. Since the sugar that should have been decomposed and turned into alcohol remains, sake with a sweetness reminiscent of honey is created.
By quietly maturing in the warehouse (MATURED), it has a deep and mellow taste.
