In 1907, more than 100 years ago, Mr. Yataemon Sato, a devoted farmer in Inoko, Mikawa Town, Yamagata Prefecture, succeeded in raising seedlings. "I-go" is an excellent variety that boasts the largest planted area in Japan. With the cooperation of Mr. Hiroki Otaki of Higashinuma in the town, we succeeded in harvesting this I-go for the first time in 80 years. Watarai Honten Co., Ltd., which has a history of 400 years in the liquor industry, is brewing using this i-go as a raw material in Oyama, Tsuruoka City.
It has a strong taste of undiluted sake that seeks sharpness for summer, and it is recommended to enjoy it on the rocks with edamame in hot summer.
