Currently (2021.4), we are managing about 0.4 ㏊ fields with single short tree cultivation. Two types of Pinot Noir are cultivated in Uenoyama field, which is mainly composed of red soil with a lot of pebbles. Every year, cultivation is devised to suit the climate of Kaminoyama, and only the perfectly ripe years are brewed as red wine. A cornerstone of our sparkling wine blends, this variety has been used since the winery opened.
