We use Delaware and Shine Muscat grown in our own farm in Nanyo City, Yamagata Prefecture.
The grapes are grown organically with no fertilizer or compost, without spraying any pesticides other than Bordeaux liquid, and are carefully selected and destemmed at the time of harvest. After 9-14 days of skin fermentation in an amphora, the wine was pressed, returned to the amphora, and aged for about 10 months before being bottled. Fermented with wild yeast, unfined, unfiltered, and without added antioxidants.
The aroma combines tangerine peel and lemongrass with the characteristic candy aroma of table grapes. The taste is fresh, with a good balance of sweet and sour from table grapes and tannins from maceration. Even in the aftertaste, you can feel the soft and fresh taste of grapes, but there are bitter tannins mixed in.
