This year, we used Seyval Blanc from Saichi Endo.
It has the same softness as the previous vintage, with notes of white fruits and flowers.
This time, we pressed the grapes after two days of skin contact to bring out a deeper expression. By intervening as little as possible after fermentation, we can detect a slight hint of ethyl acetate.
Although we originally planned to release it within the year, fermentation proceeded slowly, possibly due to the low rainfall in 2025, resulting in a release after overwintering. This extended period brought out a solid umami. It has a gentle la France-like fruitiness, a subtle bitterness, and a moderate fizziness. Chilled well, it's a finish that can be pleasantly enjoyed in the hot season.
This is our first experience with ethyl acetate in about 20 years of winemaking, so we've kept the price low. It was very well received and sold out quickly at a recent event. We believe you'll appreciate its high cost performance. Please give it a try.
